If one knows Penny, they know she has a tendency to fill the freezer (and our tummies) with cookies. Her specialty are her Browned Butter Chocolate Chip Cookies with sea salt flakes sprinkled on top - they rarely last long extend a visit to the freezer.

So naturally, cookies with be served at her wedding PARTY - I hesitate to use the word ‘reception’, it is much too stuffy and formal. My insides cringe a little every time I hear the word.

I may have baked just over 1600 cookies to date. Please tell me that is ENOUGH… Cookies are tricky business. I challenge you to show me a person who has not eaten a dozen cookies in an afternoon, albeit unintentionally - they are a RARE marvel and not the standard. Logic may suggest 2-3 cookies per person - WISDOM would suggest 2-12.

To say the least, I am mildly burnt out of baking cookies. The guests may not be able to eat a solid dozen confections each, but a close half a dozen may just be possible. My tummy aches at the thought of it. Sadly, I am no longer able to plunder a dozen cookies and proceed with any sense of vitality. I really should post a picture of our kitchen and the tiny oven it contains…. the largest cookies sheet it fits are the small jelly roll pans. Needless to say, I very much look forward to the kitchen part of our renovation process.

The cookie flavours? Drumroll please. Actually maybe not, they are not THAT exciting.

And as stated previously…

Browned Butter Chocolate Chip sprinkled with Sea Salt Flakes.

And making small appearances - Raisin Oatmeal and Ginger Bends… The first because the Bride and Groom both enjoy a raisin cookie, what an anomaly! True love! The second, because Penny is also known to make gingers and her Aunt Alauna devours them.

So, if you fancy baking 1600 cookies - I recommend sticking to a batch or two…
